Green Soup

Ingredients:

1 tsp olive oil
1 cup of mushrooms diced
2-3 dried shitake / porchini mushrooms
1 small onion diced
3 cups of vegetable stock
400gm sliver beet chopped roughly (leave stalks behind)
3 cups of frozen peas
Salt & pepper to taste
Squeeze of lemon juice

Method:

  1. Brown mushrooms and onions really well. You want them really caramalised to create flavour

  2. Add vegetable stock and bring to the boil

  3. Add silver beet and peas and cook for 3-4 minutes

  4. Take off the heat and whizz until a very smooth bright green consistency

  5. Serve and enjoy with a fresh squeeze of lemon
