Brown Rice Congee

Gluten free, dairy free, low fat, warming, easy to digest, super nourishing and grounding.

Ingredients:

1 cup organic brown rice

6 cups filtered water

10 dried apricots 
1-2 cinnamon sticks

Topping ideas

  • 1 tablespoon linseed meal

  • 1 tablespoon chia seeds

  • Drizzle of coconut cream

  • Extra milk of choice

  • Chopped nuts

  • Poached fruit

  • Fresh seasonal fruit

  • Drizzle of maple syrup

Method:

  1. Put all ingredients into a slow cooker and turn to low.  Cook overnight (for at least 8-9 hours) and in the morning you will have 3-5 serves of gorgeous congee for breakfast.  

  2. If you do not have a slow cooker – simply cook on a very low heat for 3-4 hours of longer if required to soak up all the water.

  3. The congee will keep in the fridge for a good few days.

  4. To serve – reheat the congee in a pot with a little extra water or milk of choice and top with your favourite toppings!

** Try using black or red rice instead of brown. Just watch the cooking as it won’t need as long.
