Jo’s muesli bar

We all love a good muesli bar. Until we read the ingredient list and nutritional panel. Too often they are loaded with excess fats, sugars, additives and preservatives. Here I think I have created one that ticks most of the boxes. It is tasty, easy to prep and full of fibre & protein. This bar is loaded with nutrient dense ingredients that equals a super nourishing snack for you!.

Nut, dairy, wheat and egg free

Ingredients:

180gm honey
100gm nuttelex
2 cup whole oats
1/2 cup lupin flakes
1/2 cup shredded coconut
1/2 cup hemp seeds
1/4 cup chia seeds
1/4 cup psyllium husks
1 cup of chopped dried mixed fruit of choice

Additional information

  • If you do not have lupin flakes simply add more oats, or replace with such things as wheat germ or quinoa flakes

  • Add spice if you wish! - Ginger and cinnamon would be lovely. As would a drop or two of of vanilla extract

  • Choc chips would be a nice addition too

  • Replace nuttelex with nut butter if you wish

  • Use other seeds too such as pumpkin, sunflower and flaxseed

Instructions:

  1. Preheat oven to 180deg

  2. Melt nuttelex and honey in a saucepan

  3. Add the rest of the ingredients and combine well

  4. Add a dash more honey if the mix is too dry

  5. Pour mix out in to a lined baking / slice tin and push the mix down so it is nice and compact

  6. Bake in the oven for 15-20 minutes until golden brown

  7. Remove from oven and allow to completely cool then cut in to desired bars!
